How to use it
Use it by the drop, not the spoonful. Over aged Parmigiano Reggiano, on a ripe strawberry, across a seared steak after it leaves the pan, or on vanilla gelato. In Modena it is taken neat from a teaspoon after dinner as a digestivo.
Why it's different
Every bottle is filled and sealed by the Consorzio Tutela in Modena, not by the producer, and only after passing a blind tasting panel. The bottle shape is trademarked and identical across all DOP houses, carrying a numbered seal at the neck. If a balsamic is not in that bottle, it is not DOP — whatever the label says.
